It is July right now, we are in Texas and have a tree blessing us with an abundance of sweet, juicy peaches. It would only be right for me to add some tasty peach infused recipes on the blog! Starting with this fresh salad!
Peaches are such a great addition to any salad, they are sweet, full of fiber, and rich in vitamin C. They not only enhance the flavor of a dish but the increase the nutrient level as well.
This beautiful and vibrant salad is a great addition to any summer BBQ or can be enjoyed on its own as a meal.
If you would like to add some protein, feel free to add some oven roasted tofu or other protein source.
For the dressing, you will likely have some leftover, store it in an airtight container for up to 5 days.
Optional: if you want some extra nutrition, you may add 3-4 tbsp hemp seeds, broccoli sprouts, and or some ripe avocado.

*Dressing
In a large bowl, toss all the salad ingredients together.
In a small bowl, add the dressing ingredients and whisk it together.
Add the dressing to the salad combine and enjoy!
