Ummmm I will take a side of pickled everything, puhhlease!!! Something about pickled onions returns me to my sweet childhood days. My mama would make the most delicious sandwiches loaded with delicious fresh veggies and very often topped with her homemade pickled red onions - mouth watering delicious!

She would offer to make me one, I would often decline thinking that I was not hungry... until I saw the veggie loaded creation that sat high on her plate. I would then creep over and sneak bites, eventually taking over her whole sandwich (thank-you mama-bear)!

So back to my pickled onions, they are more then just a condiment to me. Whatever dish you choose to use these easy to make pickled onions on, I'm sure you will love them as much as I do.

Ingredients

  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 1/2 tsp coconut sugar
  • 1/2 tsp sea salt
  • 1 red onion, sliced
  • 2 cloves garlic

Directions

Place all the thinly sliced red onions into a heat safe jar (I use weck or mason).

In a medium sauce pan, add the remaining ingredients (not the onions). Bring to a simmer over medium heat and then pour it into the jar over the onions.

Using a spoon, press the onions down into the vinegar. Allow them to cool at room temperature (about 30 mins).

At this point they are ready to eat or store in the fridge for up to 2 weeks (best if eaten within 5 days).
