I love salads, I really do. I eat a salad every single day and have been for years. I love the crisp texture when biting into the vegetables, the vibrant color it adds to the table, and the energy I get from it.

Ingredients

  • 1/2 an avocado, sliced
  • 1/4 cup pomegranate seeds
  • 1/4 cup red onion, diced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 2 cups arugula
  • 2 tbsp balsamic vinegar 5 cherry tomatoes, halved
  • handful of slivered almonds
  • salt and pepper to taste

Directions

Wash all the vegetables and prepare as noted in the ingredients (except the avocado), place into a medium sized bowl. Add the almonds.

In a small bowl mix the olive oil, balsamic vinegar, minced garlic, salt and pepper - mix well.

Add the dressing to the salad and mix to coat the vegetable. Add the sliced avocado.

Serve.
