Hummus is one of our favorite snacks, it is very nutritious and an easy 'grab and go' when in a pinch. This hummus can be eaten as a vegetable or cracker dip and/or spread on a tasty sandwich or wrap.
This roasted beet hummus is made with oven roasted beets, chickpeas, olive oil, spices, tahini, lemon juice, and fresh garlic. I like to serve this with some chopped cilantro, hemp seeds and/or pomegranate seeds... it adds some extra ummph and it looks pretty.
More about the ingredients, beets are amazing as they are rich in antioxidants, vitamin C, potassium, and manganese. They are also high in fiber - total nutrition powerhouse!
Prepare the chickpeas overnight by soaking them in filtered water, this is thought to improve their digestibility. It seems like extra work (compared to using a can), but trust me, it is so worth it and it gets easier to do with practice.
