My first time having Kale salad was at a Whole Foods salad bar, I was hooked! I had to create my own delicious recipe and make it a staple in our home.

The secret to a good kale salad is tearing apart the leaves with your hands and then massaging the broken leaves with the dressing (for a minute or two). Doing this helps breakdown the cell structure and makes it softer to chew.

Feel free to swap the walnuts for another nut of choice. Toasted pine nuts or almonds pair well.

Ingredients

  • 2 cups kale, stemmed and broken into bitesize pieces
  • 1/2 medium avocado, just the flesh
  • 1-2 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • 1/4 tsp sea salt
  • black pepper
  • 2 cloves garlic, minced
  • 1/4 cup red onion, diced
  • 1 cup red grapes, quartered
  • 1/4 cup walnuts, toasted

Directions

Remove the stem from the kale and tear it into bite size pieces. Place in a medium size bowl.

In a small bowl, smash the avocado and mix in the olive oil, lemon juice, sea salt, pepper, and minced garlic. Add it to the kale - massage it into the leaves for a few minutes.

Add the onion, grapes and toasted walnuts.

Serve and enjoy!
