I'm always thrilled when we have guests over, especially because it means I get to prepare and serve delightful appetizers like these Caprese Crostinis.

We're fortunate to have a kitchen garden where we grow tomatoes and basil. There's something incredibly gratifying about harvesting fresh produce from our backyard and sharing it with our guests. It's a labor of love that truly pays off.

Caprese Crostinis look stunning when arranged on a wooden serving board or a pristine white plate. The vibrant colors of the tomatoes and basil add a striking visual appeal, especially when complemented by a drizzle of balsamic glaze. They're almost too beautiful to eat, but trust me, they taste just as amazing as they look.

The combination of melted mozzarella cheese, fragrant basil, juicy tomatoes, and sweet balsamic is simply divine. I'm confident you'll enjoy every bite.

For an extra crunch, consider adding sliced red onions, avocado, and/or some fresh berries.

Ingredients

  • 1 long baguette sliced into 1/2" thick pieces
  • 2 tbsp extra virgin olive oil (used to brush the baguette)
  • 2 cloves garlic
  • 2-3 Roma tomatoes sliced into 1/4" thick slices (may sub for tomato on hand)
  • 8 oz fresh mozzarella cheese sliced into 1/4" thick pieces
  • 1 cup fresh basil
  • balsamic glaze
  • sea salt and black pepper to taste

Directions

Preheat the oven to 350°. Slice the baguette.

In a small bowl, mix together the olive oil, minced garlic, and a pinch of salt and pepper.

Slice the baguette and brush each side lightly with the olive oil mixture. Bake for 6-7 minutes to toast it lightly.

Top the toasted baguette slices with a slice of mozzarella, fresh basil, and tomato. Drizzle on some balsamic glaze.

Serve immediately and enjoy your delicious Caprese Crostini!
