This recipe here is a deliciously nutty twist to the classic chocolate chip cookie.

Growing up my mama always baked fresh cookies for us, it was her way of sending LOVE to our bellies, we sure felt the love!

These delicious chocolate chip cookies are made with almond flour, tahini, coconut sugar, and a handful of other ingredients.

Notes: For a vegan swap, replace the egg with a flax egg. -- 1 flax egg = 1 tbsp ground flax and 3 tbsp room temp water

Ingredients

  • 1 egg (or flax egg)
  • 1/3 cup tahini
  • 1/4-1/3 cup coconut sugar (adjust for preferred sweetness)
  • 2 tbsp coconut oil, melted (may use butter)
  • 1/2 tsp vanilla
  • 1 cup almond flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips

Directions

Preheat the oven to 350°F, line a baking sheet or stone with unbleached parchment paper.

In a medium bowl add the egg, tahini, coconut sugar, coconut oil, and vanilla. Mix well using a whisk.

Add the almond flour, sea salt and baking soda. Using a spatula, mix to combine.

Now fold in the chocolate chips.

Form 12 equal size balls out of the cookie dough. Set the balls onto the lined baking pan and flatten to your desired thickness, using the back of a fork (or your fingers).

Transfer to the oven and bake for 11-12 minutes or until golden along the edges.
