In a saucepan, over medium hear, stir the frozen mixed berries over medium heat. Use a potato masher or fork to gently mash the berries, leaving some chunks for texture. Approx 6-8 minutes
Once the berries release their juices and start to simmer, reduce the heat to low.
Stir in the maple syrup or honey. Adjust the sweetness to your liking.
Add the chia seeds to the berries and mix well. Chia seeds will absorb the liquid and help thicken the jam.
Continue to simmer the mixture on low heat, stirring frequently to prevent sticking. The chia seeds will absorb the liquid and the jam will thicken in about 10-15 minutes.
If using vanilla extract, stir it into the jam for added flavor.
Remove the jam from heat and let it cool for a few minutes. Transfer it to a glass jar or airtight container and allow it to cool completely before refrigerating. Store for up to 5 days.
