I love the simplicity of these no bake cake balls, they taste amazing, are good for you, and they are so easy to make.

These carrot cake balls take less than 10 minutes to make and are the perfect "grab and go" snack when you are in a pinch for time.

The main ingredients in these healthy balls are carrots and medjool dates. Carrots are a good source of beta-carotene, fiber, potassium and antioxidants. To boost the nutrition in these balls we also added some hemp seeds.

If you like carrot cake, give these balls a try. I enjoy them out of the freezer, just remember to thaw them for about 10 minutes prior to eating. They pair well with our Chai Tea recipe, see here.

Store in the freezer for up to 3 weeks.

Notes: The Medjool dates should be soft. If your dates are hard, soak them in warm water for 20 minutes prior to using.

Ingredients

  • 5 medjool dates, pits removed
  • 1 1/2 cups carrots, peeled and shredded
  • 3/4 cup oat flour (GF if need)
  • 1/4 cup rolled oats (GF if need)
  • 3 tbsp raisins
  • 1 tbsp hemp seeds
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
  • unsweetened shredded coconut (to roll the balls in)

Directions

Prepare all the ingredients as noted in the list.

In a medium sized bowl, add all the ingredients and mix with your hand until combined (the dates will form a paste like consistency). If using a processor for this step, process until combined.

From the mixture, form 8-10 even sized balls. Roll the balls in some shredded coconut and then store them in the freezer in an airtight container.

They store well in the freezer for up to 3 weeks.
