Ingredients

  • 3/4 cup Medjool dates, pitted
  • 1 cup rolled oats
  • 1 cup walnuts, lightly toasted
  • 2 tablespoons ground flaxseed
  • 2 tablespoons hemp hearts
  • 1 tablespoon chia seeds
  • 2 tablespoons almond butter or tahini
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch of sea salt
  • 1–2 teaspoons water, if needed
  • 2 tablespoons melted dark chocolate or cacao nibs

Directions

Lightly toast the walnuts in a dry pan for 3–4 minutes until fragrant. Let cool.

Add dates, oats, walnuts, flax, hemp hearts, chia, almond butter, vanilla, cinnamon, and salt to a food processor.

Blend until the mixture sticks together when pressed. Add water 1 teaspoon at a time only if needed.

Roll into 8–10 bites.

Drizzle with dark chocolate or sprinkle with cacao nibs.

Chill for 20 minutes before serving.
