It's fall and I am ready for all things PUMPKIN! So today I am sharing the most easy way to cook a raw pie pumpkin in the Instant Pot! It is so easy, and in my opinion boosts the quality, freshness, and flavor of your baked treats (oppose to canned pumpkin)!

All you need is a pie pumpkin (aka sugar pumpkin) and water! When choosing a pumpkin, I find a 3-4 lb pumpkin works best in our 6 quart Instant Pot. We pressure cook on high and allow the pressure to release naturally.

Do not throw out those pumpkin seeds, they are nutrition packed!

Ingredients

  • 1 3-4 lb pie pumpkin (aka sugar pumpkin)
  • 1 3/4 cup water

Directions

Wash the pumpkin well and dry it.

Using a paring or serrated knife, cut a circle around the stem (top of pumpkin). Make the circle large enough to fit your hand in.

Using a spoon and your hand, remove the seeds. Feel free to toss them or set them aside to bake at a later time.

Set a wire rack into the instant pot. Add the water and place the pumpkin (top up) onto the wire rack. Close the lid so it locks and seal the pressure valve. Set the instant pot on high and cook for 20 mins, allowing the pressure to release naturally.

Once complete, allow the pumpkin to cool and remove the pumpkin skin, leaving just the flesh. Mash it and find a delicious fall recipe to make!
