Raw, vegan friendly brownies... ohhh-ho, yes please! I honestly snack on one of these delicious brownies on my way out the door, on-route to the gym. They are that good for you, truly functional food.

Dates are a great source of energy, blended with walnuts, hemp seeds, and other amazingly nutritious ingredients. These brownies are not only nutrient dense and a great source of protein, they are also guilt free... And what a great option to satisfy any sweet craving.

Ingredients

  • 1 1/2 cups walnuts
  • 2 1/2 cups pitted Medjool dates, loosely packet
  • 1/2 cup hemp seeds
  • 1 /2 cup raw cacao powder
  • 1/4 cup cacao nibs
  • 1 tsp sea salt
  • 1-2 tbsp water (if needed)

Directions

Prepare a 9x5 inch pan by lining with unbleached parchment paper, set aside.

Using a food processor, add the walnuts and process into a fine crumb.

Add the remaining ingredients to the food processor, process until combined well. Should be a sticky paste like consistency. If the desired consistency is not reached, add 1 tbsp of water at a time until met.

Remove the mixture from the processor and add to the 9x5 inch pan, press it down using your hands.

Place the pan into the refrigerator for 1-2 hours. Remove the pan and cut the brownies into squares. Store in an airtight container in the refrigerator for 1 week or freezer for up to 1 month.
