The name of this salad speaks for itself, strawberries and pecans on a spring mix. It is fresh, crisp, vibrant, and absolutely delicious... packed full of nutrient dense goodness! You can enjoy it as is, or eat it as a side.

Need cheese? Feta cheese pairs well with this salad so feel free to add some on top.

For the balsamic dressing, you will have excess, simply store the extra dressing in the fridge.

Ingredients

  • 5 cups spring mix salad
  • 14 strawberries, sliced
  • 1/3 cup red onion, thinly sliced
  • 1 cup cauliflower, broken into pieces
  • 1/2 cup pecans
  • 1/4 cup feta cheese (optional)
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tbsp dijon mustard
  • 2 cloves garlic, minced
  • salt (1/2 tsp) and pepper to taste

Directions

Wash and cut all the vegetables and strawberries, add to a large bowl.

Add the pecans and feta (optional) to the large bowl - set aside.

In a small bowl, mix the balsamic vinegar, olive oil, dijon mustard, minced garlic, salt and pepper. Pour over the salad.

Serve and enjoy!
