If you are looking for a healthy and satisfying veggie burger, look no further!

This baby is loaded with nutritious ingredients like sweet potatoes, quinoa, almond flour, cilantro, garlic, etc. It has ground flax seeds to help bind the burger so it's not as crumbly as many others can be (feel free to add more if needed).

If you want some extra protein, feel free to add 1/4 cup of cooked black beans, I often do and it tastes amazing.

For toppings, go wild! I love a variety of toppings like tomatoes, lettuce, sprouts, onions, avocados, you get my point...

Ingredients

  • 2 medium sweet potatoes, peeled and cut into cubes
  • 1 cup quinoa
  • 1/4 cup almond flour
  • 1/2 cup fresh cilantro, washed and chopped
  • 2 tbsp flax seed, ground
  • 1/4 cup red onion, diced
  • 3 cloves garlic
  • 1 1/2 tsp cumin powder
  • 1 1/2 tsp smoked paprika
  • 1 tsp chili powder
  • 3/4-1 tsp sea salt or to taste
  • black pepper
  • 2 tbsp olive oil

Directions

Preheat the oven to 375° F. Line a baking sheet with parchment paper and add the cubed sweet potatoes in a single layer. Bake for 30 minutes or until soft. Once finished, puree them with a mixer (or by hand).

Cook the quinoa according to package.

In a medium size bowl, add the pureed sweet potato, quinoa, almond flour, cilantro, flax seed, onion, garlic, cumin powder, paprika, chili powder, sea salt black pepper, and olive oil (just 1 tbsp, save 1 tbsp for brushing the burgers). Mix it well with your hands. Form 8 equal size burgers.

Heat a large heavy skillet over medium-high heat. Brush a little bit of olive oil onto each burger (both sides). Cook each burger for 6-8 minutes on each side. They will be golden brown in color.

Serve on bun of choice, loaded with fresh veggie toppings!
